CUBAN BREAD
1 package dried yeast
2 c. warm water
6 to 8 c. flour
1 T. salt
Stir together yeast, salt, sugar and water. Add enough to a
make a sponge. Let rise, covered with a dish-towel, in a
large bowl, in a warm place. (Clear out the cabinet over
the stove. Ideal temperature for dough rising is 80
degrees.) Let rise an hour or more, until the dough is
doubled in bulk. Punch down with the fist. Shape in long,
thins rolls, like French bread. Let rise another forty
minutes. Brush with egg white, using a pastry brush. Bake
for about thirty-five minutes, or until brown, starting in
a cold oven set at 400 degrees.
Cuban bread is much tastier than ordinary French or
Italian bread. It is so easy to make, yet your friends will
be amazed that you actually made it yourself. Keeps well
for a week.

(A rusk is a slice of yeast bread that is baked as a loaf then cut into rectangular slabs and
baked again until dry, crisp and golden brown much like Italian biscotti).
One cup of butter, two cups milk, one cup yeast sponge, when light beat in three eggs and
two cups sugar, let it raise again, add teaspoon of soda, let it raise again and bake.

12 ounces sugar

2 pounds flour
Mix sugar and butter together, then add eggs and beat well. Add flour gradually until
used up. Rout ½ inch thick. Bake in small cakes, placing caraway candies on top.

Raised Dough
About 3 cups flour
3/8 cup sugar
1 yeast cake
1 cup milk
1 egg
2 oz. butter (4tb.)
2 tsp. salt
Lemon rind (chopped)
Cream butter and sugar together. Stir in eggs. Dissolve yeast in warm milk. Add milk to
batch alternately with flour which has been sifted with salt. Let dough rise till double its
volume, from 3 to 4 hrs. When risen, knock it down, let stand 30 min. longer. If dough is
to be kept overnight it should be allowed to rise about ½ hr; put in refrigerator and cover.
When removed from refrigerator knock it down ad let stand 30 minutes; work until
smooth and shaped into dough, let it rise to twice its volume before baking.
Make Coffee ring: Roll out 3 stands of dough: braid, beginning at center: join ends,
baked 1 hr in oven 450 F and after 5 minutes, reduce to 400F.
